
ONE-POT MEXICAN RICE CASSEROLE
One-Pot Mexican Rice Casserole is a delectable, fast, and simple ground beef meal that comes together in one pot! This delicious dish, which includes meat, rice, corn, and taco seasoning, will be a hit with the entire family!
Everything about this casserole reminds me of everyone’s favorite Mexican rice dish from a restaurant. Except for the fact that it can be transformed into a comprehensive and hearty supper in 30 minutes or less! This rice casserole has always been a staple in my household since it is a dish that everyone can agree is delicious.
When I was young, it was something I would mix together and then bake in the oven. I was going to make this into a one-pan meal on the stovetop when I discovered I could simply prepare it on the stovetop. The rice cooks in the pan right with the cooked ground beef and onion, corn, salsa, tomato sauce, and spices, resulting in a dish that is full of delicious flavor! You may toss in your favorite shredded cheese and garnish with green onions when the rice is soft and fluffy. This dish is also delicious served with an additional side of salsa and a spoonful of sour cream!
INGREDIENTS LIST:
– Ground Beef, I used one pound.
– A Small Diced Onion.
– Salt & Pepper, To your liking.
– 2 Tbsp.Of Taco Seasoning.
– 1 Tsp.Of Garlic Powder
– Long Grain White Rice, I used one cup.
– 11/2 Cups.Of Beef Broth.
– Canned Corn, I used a large can, drained.
– Tomato Sauce, I use a can of 8-oz.
– 1/2 Cup.Of Salsa.
– 1 Cup.Of Shredded Cheese.
DIRECTIONS:
Step 1 – In a large pan over medium-high heat, cook the ground beef and onion until the meat no longer has any pink in color. If necessary, drain the grease.
Step 2 – Return the pan to the stovetop and sprinkle the meat with garlic powder and taco seasoning until it is well coated with spice.
Step 3 – Combine the rice, with beef broth, drained corn, canned tomato sauce, and salsa in a large mixing bowl.
Step 4 – Bring the mixture to a rolling boil, stirring constantly. Continue to cook for a further 18 to 20 minutes covered with a lid.
Step 5 – Add cheese on top and put the cover back on the pan for 3 more minutes, just until the cheese is completely melted.
