Beef Barley Soup!


How To Make Beef Barley Soup?


1 c. chopped garlic

5 cups sodium-reduced beef broth

2/3 cup pearl barley

Pepper to taste

1 lb. inside round steak

2 c. tablespoons of olive oil

1 onion

3 carrots

2 stalks of celery


Cut the steak into cubes.

In a large skillet, heat 1 Tbsp. olive oil over medium heat. Brown the beef for 4 min, until the meat, is browned. Remove from heat and reserve. Cut the vegetables into cubes.

In a large saucepan, heat the rest olive oil over medium heat. Cook the carrots/onion/garlic and cerely for 6 minutes.

Add the beef broth, barley, and reserved meat. Pepper. Bring to a boil, then cover and simmer over low heat for 50 minutes to 1 hour.
