HOW TO MAKE BANANA CAKE?
This is, without a doubt, the most delicious banana cake I’ve ever tasted. It’s simultaneously smooth, moist, and rich! This cake is served with a completely addictive rich frosting until it has cooled, making it the ideal dessert for your family.
I enjoy this great banana cake; it takes me back to my childhood when my Grandpa and Grandma produced the best banana cake ever. It’s already baking in my grandmother’s house, where I’m waiting impatiently with my sisters.
This cake reminds me of my grandma’s banana cupcakes, which are one of my favorites. It’s sweet, creamy, and juicy, and it’s covered with my all-time favorite frosting.
I adore a soft banana cake, so I adore it, even more, when it’s covered with this incredible frosting! For an extra flavor, I add a little lemon zest and lemon juice to my cream cheese frosting, but you can leave out the lemon and use vanilla instead.
This cake would become your go-to once you’ve tried it, regardless of how you top it. You’ll want to make this recipe if you have overripe bananas on the fridge! In reality, I often buy additional bananas in order to ripen them and make this cake!
TO MAKE IT YOU’LL NEED :
3 Cups.Of Cake flour.
2 Cups.Of granulated white sugar.
1½ Cups. Of mashed ripe bananas, it’s around four to five large bananas.
1½ Cups.Of buttermilk.
3/4 Cup.Of softened butter.
3 large eggs.
2 Small spoons.Of vanilla extract.
1½ Small spoons.Of baking soda.
2 small spoons.Of lemon juice.
1/4 Small spoon.Of salt.
AND FOR THE FROSTING, I ONLY USED FOUR INGREDIENTS:
The medium Pkg.Of softened cream cheese.
½ Cup.Of softened butter.
1 small spoon.Of vanilla extract.
3 Cups.Of icing sugar.
Initially, I heated the oven to 275 degrees F = 135 degrees C and lined a 13-inches sheet with parchment paper.
In a small bowl, I mixed the mashed bananas with 2 small spoons of lemon juice, and let the mixture for later.
In another mixing bowl, I sifted the cake flour with baking soda, then I sprinkled the salt; I mixed well until I had an incorporated dry mixture.
After that, I choose another bowl, and I beat in the three-quarters cup of soft butter with granulated white sugar using an electric mixer for few minutes until I had a creamy, light, and fluffy mixture.
Then, I added in the eggs one by one, beating well after each addition, and I added the vanilla extract and beat again.
Alternately, I added in the mixture of flour with the buttermilk and I beat again until combined.
At this point, I needed to add the mashed bananas and stir well.
I poured the batter into the prepared pan, and pop it in the oven that I’ve to preheat before, and I baked the cake for around 50 to 60 minutes. I always used my wooden tester to check my cake if it’s done or not.
When it cooked, to make the cake very moist, I removed the pan from the oven and placed it immediately in the freezer for around one hour.
And to finish, I mixed the frosting ingredients together in a medium bowl, and I spread it over the cake when I wanted to serve It.
